Charlie Palmer’s “The Beefsteak” Returns to Grand Sierra Resort, September 27

RENO, Nev. (August 29, 2025) – Guests are invited to roll up their sleeves and dive into a feast steeped in history as Charlie Palmer’s The Beefsteak returns to the Grand Sierra Resort and Casino (GSR) on Saturday, Sept. 27 from 6 to 9 p.m. inside the Reno Ballroom. Inspired by a New York tradition that dates back to the Victorian era, this cutlery-free beef bacchanal is an evening of indulgence that’s not for the faint of heart.

The evening begins with a welcome cocktail, the Frey Ranch Porch Swing, paired with an extravagant charcuterie spread. Guests will enjoy sliced Iberico and Serrano jamón, assorted salami, imported and domestic cheeses, melon and balsamic skewers, local honey and jam, roasted nuts, and pickled vegetables—all meant for eating with fingers, not forks.

The second course includes a bold twist on a steakhouse classic: grilled romaine chopped salad with avocado, gorgonzola, tomato and white French dressing. For seafood lovers, a decadent Hokkaido scallop gratin is served alongside a California prawn bathed in garlic tomato butter, an irresistible combination that’s rich in flavor.

For the main event, guests will savor a trio of bold, imaginative entrées. The sous vide Wagyu short rib is exquisitely tender and full of deep, savory flavor. The garlic and herb-stuffed porchetta delivers rustic comfort with elevated execution, while the cotton candy lamb rack adds a playful, unexpected sweetness to the meat-centric menu. An array of complementary sides, including smashed heirloom potatoes, roasted cauliflower steak and cabernet gravy, round out the savory feast.

To cap off the evening, guests will be treated to a decadent dessert spread including butterscotch pudding, pecan wedding cookies, peanut butter cup ice cream sandwiches, lemon-glazed cake kabobs and cotton candy—a fittingly over-the-top finale for a night devoted to indulgence.

Drinks will be flowing throughout the evening, with beer from local favorites, whiskey provided by Frey Ranch, and a curated selection of award-winning wines.

Chef Charlie Palmer will once again preside over the evening as master of ceremonies, while live entertainment will keep the party vibrant with music and sing-alongs. Songbooks will be provided to anyone ready to join the chorus.
