RENO, Nev. (Feb. 18, 2022) –Tickets are available now for the Spring Celebration Dinner with Chef Charlie Palmer hosted in the Crystal Ballroom at Grand Sierra Resort and Casino (GSR) on March 12 starting at 6:30 p.m. Chef Charlie Palmer and the team at Charlie Palmer Steak are welcoming spring with an indulgent five-course tasting menu of seasonal fare with perfect wine pairings.
The celebratory dinner begins with flame charred Hamachi with yuzu bone broth, mirin poached Asian pear and black garlic puree, paired with the 2018 Robert Mondavi Fume Blanc.
Next is gnocchetti sardi primavera with pancetta, spring peas, garlic-white wine butter sauce and Parmigiano-Reggiano served with the 2018 Robert Mondavi Chardonnay.
For the third course, guests will enjoy the 2018 Private Select Robert Mondavi Pinot Noir as they tuck into a duo of pork – grilled tenderloin topped with an ancho Chile sauce and crisp pork belly with cured egg yolk and bliss maple syrup.
The fourth course features a seared filet mignon with bordelaise sauce accompanied by sauteed morels, roasted spring onion and Yukon gold potato puree paired with the 2016 Robert Mondovi Cabernet Sauvignon.
The meal concludes with a graham cracker-crusted lemon chiffon cheesecake topped with fresh berries and mascarpone cream enjoyed with the 2019 Robert Mondavi Moscato D’Oro.
